Formaggio Ubriaco Pasteurised cow's milk. Veneto, Italy
This literally 'drunken' cheese is easily identifiable by its distinctive purple rind, decorative vine leaf and the white 'SELVA' branding on its perimeter. The cheese itself has a wonderful straw colour and a dense texture. When freshly cut a delicious sweet syrup seeps from the small sparse-like spots. Formaggio Ubriaco is comparable to mature cheddar; however, it has a sharper fruity flavour and a spicier after bite.
TIP: There are only a few truly authentic Ubriaco producers, so when buying Ubriaco always ask how long l'ubriacatura lasted, and if less than six months it is not authentic. Some 'rogue' producers have been known to leave the product for just a few days which only serves to colour the rind and has absolutely no effect on the flavour of the cheese. Also if an Ubriaco is too cheap please don't think you have a bargain, this is the key sign that the producer hasn't dedicated the care, attention and quality ingredients required at each stage of cheese production.
