To make “Salsiccia Sarda” the meat has to be hand-cut by knife and not minced. This gives a texture that differentiates this Sardinian speciality from other salami.
This salame comes from the west of Sardinia. It is made with free range pork and the addition of fennel seeds gives a subtle aniseed flavour.
