From the town of Desulo comes this moist cured salame made with free range meat from the Razza Sarda pig. The meat used in this mighty salame is free of gluten and lactose and the meat is hand cut with a knife to produce its characteristically large coarse grains. Roaming freely the Razza Sarda often breeds with wild boar resulting in a salame with a fairly low fat content and rich and intense aroma and flavour. |
