Sardinia. Pasteurised Ewe's Milk

Brigante is the most delicious of fresh pecorinos and is made in the area around Thiesi in the north of the island. It is eaten all over Sardinia where it is also known as Dolce Sardo from the sweetness of the ewe's milk from which it is made. Its unusual lemony, yeasty flavour combines with a marvellous creamy texture to make it our consistent best seller.
