What a wonderful cheese, matured for 24 months on the farm. The taste is strong and rich, but never overpowering. As well as grating, a parmesan of this quality makes a great table cheese served with quince paste or dried fruits. It keeps well with proper care: pieces should be wrapped in greaseproof paper then cling film to keep it at its best. Alternatively Parmesan freezes very well. |
