Traditionally, this pecorino is made by the shepherds in their mountain huts known as 'pinnette', where their open fires give the cheese its characteristically smoky overtones. During maturation the wheels are periodically turned and massaged with olive oil, the ageing process lasts for a minimum of eight months. It has a strong, dry and spicy bite making it ideal for grating. |
