'Medaglie d'Oro' (Gold Medals) Aceto di Balsamico di Modena a classic and versatile balsamic vinegar, which is both sweet and sour, with a low acidity
Following the acetificio's classic recipe 'Medaglie d'Oro is a balsamic vinegar with a rich bouquet created with a high quantity of slowly cooked grape must, which is complemented with a dose of vintage wine vinegar before being transferred to the famous oak barrels. Towards the end of ageing the remedy sees the addition of the exceptionally old aceto di balsamico which is extracted from the centuries old and most precious casks.
'Medaglie d'Oro' is a luscious brown syrup with a rich and persistent perfume and firm flavour. Its distinctive bouquet carries a flavour which is both sweet and sour.
The balsamic vinegar has a balanced acidity making it perfect for use for dressing salads, with raw vegetables, carpaccio, shellfish and red meats. It can also be added to sauces and even gravy, but make sure it is added at the end of cooking because it only needs to be warmed through, rather than recooked.
