An integral part of the Sardinian maquis is the Strawberry Tree or Corbezzolo. The bitter fruits are used to make jams and liqueurs while its wood is used to smoke our cured swordfish, which are one of our personal favourites and proudest product offerings. Wild fish are caught off the coast of Sardinia throughout the spring and are smoked for 6 hours leaving them moist and full of flavour. Try serving as a starter with lemon juice, olive oil and black pepper.
