36 month mature, this Parmesan comes from an organic dairy situated on the luscious mountain pastures of Monchio Delle Olle. It is produced using the organic semi-skimmed milk from cow's fed on fresh forage. It has a lovely straw colour, rich, full and almost toffee-like flavour, while the salt crystals provide its crumbly texture. |
