gratin of artichokes, potatoes and onions

serves 6

6 artichoke hearts sliced very thinly
1 lemon
25g butter
115g sliced onion
3 medium potatoes sliced very thinly
50g grated parmesan


Slowly cook the onions in the butter.

Add the artichokes and potatoes and turn them several times to coat. Choose a baking dish and dot the bottom with butter then pour in the potato and artichoke mix.

Dot with more butter and a few grindings of black pepper and place on the top shelf of a preheated oven (gas 6) for 30 mins or until tender.

Take out and top with the parmesan then return to the oven for 2 mins to melt it.
