From the same family as Gruyère, Comté comes in an impressive wheel and has a sweet, nutty flavour. It is the richest and most popular cheese in France, using 530ltrs of milk to make one cheese weighing 45kg. Affinage lasts 90 days during which time the cheeses are regularly wiped and rubbed with brine, and huimidity of 92% ensures that the cheese remains moist and supple. Ours is made in the Jura mountains close to the Swiss border and has a wonderfully complex nutty flavour, making it a beautiful table or melting cheese. |
