Carnaroli Risotto Rice Verona
Carnaroli, the king of risotto rice, is prized for its delicate cereal flavour and high starch content. The more starch, the more asorbent the grain and thus the more creamy the risotto. This is at the same time as retaining an al dente bite in the middle. Carnaroli also has the lowest yield of all the risotto grains and ours is grown at the Verona based mill of Ferron, one of the oldest rice mills in Italy (1605). Their paddy fields are irrigated with pure Alpine waters and no pesticides are used - there are carp in the paddies to eat any pests! |
