Bottarga is the salted pressed roe of either mullet or tuna. The small, tear-shaped mullet roes are the most highly prized and the finest quality come from the area around Cabras, a brackish lagoon on the west coast of Sardinia. Grate onto pasta with melted butter, garlic and parsley, or serve thinly sliced as an antipasto with crostini. |
