This parmesan is made on an organic dairy in Reggio-Emilia, which produces its own milk and rennet. The cheese is matured on the farm for two years and the taste is strong and rich, but never overpowering. A parmesan of this age is ideal for grating but can also be used as a table cheese served with quince paste of dried fruits. To maintain freshness pieces should be carefully wrapped in wax paper then silver foil. |
