Anchovy fillets in olive oil.

The most famous fishing areas for anchovies are the Gulf of Naples and Sicily where Cefalu, on the north coast, is the centre of production.

Anchovies play an extremely important part in Italian cuisine for the burst of flavour they add to so many and varied dishes. They are found in all kinds of seemingly unusual combinations, from lamb stews to black truffle sauces and once you have them in your kitchen they will soon become indispensable.

The fresh fish are first left in sea salt for 3 months. The excess salt is then rinsed off and the fish have their heads removed before being hand filleted and placed in a centrifugal spinning machine to remove all excess water. They are then placed in the jars and covered with olive oil. The quality of our anchovies is obvious just from looking at them - fat and juicy and packed with flavour.
