In the summer of 2003 we started selling a range of French cheeses which we buy weekly from a little warehouse in Hammersmith.
Our supplier, Franck travels to Normandy every other Sunday where his father in law makes camembert. There he hand picks the cheeses he wants and drives them back to London on Tuesday. They are stored in one of his three cold rooms all set at different temperatures to ensure the correct conditions for affinage.
Consequently, we have a small but perfectly formed French cheese list which is an excellent complement to the Italian range we offer. Stefano and Enrico are reluctant converts, being suspicious of anything that isnt Italian, but converted they are. In fact, Stefanos favourite cheese? Cropwell Bishop Stilton. Just dont tell anyone...
