Riccardo Giusti wrote the special recipe for this most wonderfully sweet balsamic vinegar and the precise details still remain a secret today. I can tell you that the finest selection of local grapes are cooked extensively over a low flame before the resultant syrup is transferred to acetificio's most valuable antique barrels to age.
As soon as you remove the cork the fabulous bouquet of aromas are released. 'Riccardo Giusti' has a texture which is both rich and dense and a roundness of flavour which is deliciously sweet and fruity.
This most special balsamic vinegar is to be used as a sauce. Its consistency renders it ideal for adding to barbequed or grilled meats, including chicken and fish.
